Liver Fry

Ingredients

Chicken/mutton liver - 1/2 kg (or 1 LB)
Onion - 1 no.
Garlic - 4 - 5 flakes
Ginger - 2 inch
Black Pepper Powder - 1 - 2 tsp
Green onion leaves - 1 bunch
Chilli Powder - 1/4 tsp
Green chillis - 2 - 3 nos.
Oil - 5 - 6 tsp
Salt - As per taste

Method:

  1. Cut the liver into small pieces say about 1 inch in size.
  2. After cutting, clean them thoroughly.
  3. Chop the onions lengthwise.
  4. Chop the green chilis lengthwise removing the seeds.
  5. Grate the ginger and garlic.
  6. Chop the green onion finely.
  7. Now, in a non-stick pan cook the liver with 1 cup of water or till the liver is cooked well with salt, pepper powder, chilli powder.
  8. Dry all the excess water. Put one or two tsp of oil and just fry the liver for five minutes. Keep it aside.
  9. Simultaneously in another pan put little oil, fry ginger and garlic paste. Add chopped onions and fry them till light golden.
  10. Finally mix the mixture to the liver and stir them. Add the green onion leaves and fry them for some more time till everything is blend well.
  11. Serve them hot. You may adjust the masala as per your requirement. It taste superb and can be eaten as side dish or with a drink.
