Poached Egg Curry

Ingredients

Eggs - 2
Onion cut into very small pieces - 4 table spoons
Chilli powder - 2 teaspoons
Turmeric powder - 1/4 teaspoon
Oil - 1 tablespoon
Water - 2 glasses
Salt to taste
Curry leaves

Method

  1. Heat a pan, preferably little bit shallow one and pour oil.
  2. Fry the finely chopped onions until brownish in colour. Add chilli powder, turmeric powder and curry leaves and stir it for another half a minute. Now pour 2 glasses of water to this and boil it. After pouring water you can add salt to it.
  3. Once the water is boiled properly, break eggs and put carefully into the water. Let it get cooked for 5-6 minutes. Now carefully turn the eggs to the other side and let it get cooked properly. After 2-3 minutes cut the eggs into two and simmer it for another 1-2 minutes. Now your poached egg curry is ready.
  4. Serve it with rice.
