Poached Egg Curry
Ingredients
Eggs - 2
Onion cut into very small pieces - 4 table spoons
Chilli powder - 2 teaspoons
Turmeric powder - 1/4 teaspoon
Oil - 1 tablespoon
Water - 2 glasses
Salt to taste
Curry leaves
Method
- Heat a pan, preferably little bit shallow one and pour oil.
- Fry the finely chopped onions until brownish in colour. Add chilli powder, turmeric powder and curry leaves and stir it for another half a minute. Now pour 2 glasses of water to this and boil it. After pouring water you can add salt to it.
- Once the water is boiled properly, break eggs and put carefully into the water. Let it get cooked for 5-6 minutes. Now carefully turn the eggs to the other side and let it get cooked properly. After 2-3 minutes cut the eggs into two and simmer it for another 1-2 minutes. Now your poached egg curry is ready.
- Serve it with rice.
