Brinjal With Curd

Serves 2

Ingredients

7 long brinjal
2 mediun tomatoes (chopped)
1 medium onion (chopped)
3 green chillies (chopped)
1/2 tsp turmeric
3tbsp oil
1tbsp chillipowder
1/2cup curd(if the curd has little bit of savour taste it tastes really great)
Salt ti taste
corriander leaves chopped
few Curry leaves

Cooking method:

  1. Take a water in a bowl add 1tsp of salt....cut the brinjal into thin pieces and put them in the water this helps to keep the brinjal colour white.
  2. In a pan take 3 tbsp of oil add mustard,urud dal,dry red chillies let them fry a bit(until they turn red) add curry leaves and now add chopped onions,green chillies and brinjal together.Add 1/2 tsp of turmeric powder and salt.Cover the pan with a lid let it be on low flame.
  3. Keep stiring in between make sure brinjal doesn't become paste while stiring.Once brinjal is cooked add chopped tomatoes let them cook until they are done.Now turn of the flame add curd , chilli powder mix it sprinkle chopped corriander and serve with chapati or rice.

you can make snake gaurd in the same manner.
