Hi,
I enjoy browing through and picking recipes and trying them out from Bawarchi. I was looking through the contributions and could not find a almost daily Gujarathi bread called "Debru". So here is my contribution.

Debru

Ingredients

1 spinach bunch cleaned and chopped finely
2 cups Wheat flour
1/2 teaspoon turmeric
1/2 teaspoon red chilli powder
1 teaspoon dhania-jeera powder
1 teaspoon sugar
1 1/2 teaspoon ajwain
3 tablespoon vegetable oil
some sour yogurt to mix the dough.
salt to taste
Ghee to pan roast the debru.

Method:

  1. Add the chopped spinach to a bowl and add the flour, turmeric, chilli powder, dhania-jeera, sugar, ajwain, salt and mix well. Add the oil and mix well. Add the yogurt now knead into dough.
  2. Leave the dough in the refrigerator for a couple of hours or you can immediately start cooking the theplas.
  3. Roll out the debru like chapatti and cook them in a pan by cooking first on one side.
  4. Turn it over and add ghee. Turn to the other side and add some ghee again.
  5. It should be cooked well on both sides.
