Red Masuod Soup

Ingredients

500 grams red pumpkin
1 small potato
2 flakes of garlic chopped
1 medium onion chopped
1 tablespoon butter
3/4 cup low fat milk
a pinch of ground nutmeg
Freshly ground black pepper
Chopped coriander leaves for garnishing.
Salt to taste.

Mehtod:

  1. Wash and remove the skin and the seeds from the pumpkin, and cut it into cubes.
  2. Peel the potato and cut into small pieces and cook it with the pumpkin in a pan by adding water.
  3. When the pumpkin and potato are very tenderdone off the burner.
  4. Heat butter in another pan and add garlic.Fry this for few seconds.
  5. Now add onions and fry till light brown in colour.
  6. Next add cooked pmpkin and potaoes and stir for 2 minutes.
  7. When the mixutre is cool grind it into a smooth paste.
  8. Transfer the paste back into the pan, add water.(this soup become very thick so add the water of the consistency you like.) and milk.
  9. To this add salt pepper and nutmeg and give it a boil.
  10. Serve hot in a bowl and garnish it with chopped coriander leaves.

Tip: Instead of using coriander for garnishing you can also use frsh parley.
