I am Chitra Bharath basically from Bombay, India but right now in New Jersey, USA with my husband who is on a project here. I am a homemaker and I love cooking, learnt this recipe from my mom. My email Id is bit_chit@yahoo.com

Green Macaroni Masala

Ingredients

1 small pkt of Macaroni or Pasta (any brand)

For grinding :
1 small cup grated coconut
few green chillies
coriander leaves
4-5 curry leaves
1/4" ginger
1 onion (optional)
salt to taste

For tadka :
1/4 tsp cumin seeds
1/4 tsp mustard
1/4 tsp urad dal

Method :

  1. Cook the macaroni separately in a vessel with sufficient water for 12-15 minutes or till tender. Take care that they don't become too soft. Once they are cooked transfer the macaroni in a colander to drain all the water.
  2. Make a paste of the grated coconut, green chillies, coriander leaves, curry leaves, ginger. Onion is optional. This paste can be made and kept in the freezer for 3-4 days if one doesn't have enough time .Add salt to the paste.
  3. In a kadai, make a tadka of cumin seeds, mustard and urad dal with little oil. Add the above paste and saute for 5 minutes. Then add the cooked macaroni and mix them all together on the gas for 5-7 mins. Garnish with more coriander leaves & coconut if required. Serve hot.
  4. It is easy and quick to prepare this dish and tastes good too.....the Indian taste of Macaroni or Pasta.
