Paalak Patra

Ingredients

34 big palak leaves
2 cups --- bengal gram flour (besan)
3 tbsp rice flour
lemon size ball of tamarind
2 tsp sugar or jaggery
1/4 tsp turmeric powder
1 tsp ginger-green chilli paste
1 tsp garlic paste (optional)
1 tsp pav bhaji masala
Salt for taste

Seasoning:
1 tsp sesame seeds
1 tsp mustard seeds
2 tsp oil

Garnishing:
2 tbsp grated coconut
1 tbsp chopped corriander leaves

Method:

  1. Soak the suger and tamarind water.
  2. Wash and soak palak leaf in ice cold water atleast one hour.
  3. Mix together all the ingredients and tamarind water and make it a slight thicker paste (consistency enough to apply)
  4. Keep one leaf with the pointed part towards you. Apply the paste fully, Next place another leaf but with the pointed side away from you like this apply the paste for 4 leaves.
  5. Fold the sides slightly and make small cylinders
  6. Steam in a steamer for 15 mins
  7. Cut it in thin strips and keep aside
  8. Tempering by heating the oil in the pan and adding the mustard seeds and sesame seeds, stirring for 30 seconds
  9. Toss the paatras in the pan and stir for a few minutes
  10. Serve hot garnished with coriander and coconut.
