The recipe that I am going to share with you all is the preparation
of potato stew. This is an idle dish for chappatis, puris or even any
type of fried rice, dosas etc.

Potato Stew
Ingredients
I can of coconut milk Appr. the milk should be equivalent to the milk from 1
coconut.
potatoes-5
onions-2 medium sized ones
greenchillies-6(vertically slit ones)
curry leaves
channa dal-1tsp
ginger-itsp
coconut oil-1 tablespoon
Method:
- Boil the potatoes and peel the outerskin.
- Take a deep frying pan or a china dish and season with mustardseds, channadal, chillies, ginger and curryleaves in coconut oil
- Add the onions and fry till it turns pink in colour.
- Now add the boiled potatoes and keep frying it.
- Fry in medium heat for 5 minutes.
- Now add one half of coconut milk and add salt and let it solidify.
- Now add the remaining coconut milk and leave it for 5 or ten minutes in medium heat.
- If needed, add little coconut oil and remove the coconut stew from the stove.
