Vegetable Lasagna
Ingredients
15 oz ricotta cheese
1 green pepper-capsicum
1 big onion
1 med size zucchini
1 cup shredded carrots
2 garlic clove
spaghetti sauce-as needed
6 lasagna noodles-cooked/boiled
1 tsp black pepper
1 tsp oregano
1 tsp basil
1 tbsp oil
salt as needed
mozzerella cheese
Method:
In a pan, heat oil. add cut garlic clove. after a minute, add onion,
capsicum, zucchini, and carrots. let veggies steam in pan over medium heat
for 8-10 mins or till tender. add a pinch of salt.
In a separate pan, take all of ricotta cheese (if you don't like too much
ricotta, take half of the cheese from the container). Add black pepper,
oregano, basil, and a pinch of salt.
In a cake pan, lay out a thin layer of spaghetti sauce, put two lasagna
noodles next to each other(overlay a little). spread ricotta mixture over
the noodles. spread a layer of the steamed veggies, and top with spaghetti
sauce. top with lasagna noodles, repeat with cheese,veggies, and sauce.
top with lasagna noodles. on top, put more spaghetti sauce and add
mozzerella cheese. bake in oven at 350 deg till cheese is melted.
