Peanut Macaroons
Ingredients
Sugar - 85 gms
Vanilla essence 1/2 tsp
Peanuts - 85 gms
Egg whites -2
Salt a pinch
Method:
- Toast peanuts in oven for a few minutes.
- Peel the skin, chop and sprinkle with salt.
- Beat eggs to a stiff froth add essence and sugar gradually and continue beating.
- Fold in the nuts.
- Arrange teaspoonful of mixture apart on a greased and floured tray and bake in a slow oven 150 degree C (about 300 degree F) till firm and light brown in colour.
