Hi friends,
I am Shantha Radhakrishnan, Madurai (South India) giving you a recipe about which we would have been wondering.. Yes, it is Hotel Sambhar. The different taste of the sambhar was something different than what we do in our houses. However, I got the recipe from one of the magazines, tried it and enjoyed it. I want you to enjoy the same also.

Hotel Sambhar

Ingredients

1. Dhaniya (coriander seeds) ... 1/4 kilo
2. Fenugreek ... 1 tsp
3. Mustard ... 1 tsp
4. Red chillies ... 50 gms
5. Toor dhal ... 30 gms
6. Turmeric powder ... 1/2 tsp
7. Asafoetida ... 1 tsp
8. Salt ... to taste
9. Tamarind ... 100 gm
10. Onion -- chopped ... 1
11. Tomatoes -- chopped ... 2

Procedure:

  1. Fry the dhaniya, fenugreek, red chillies in a pan without oil, make a powder of these in a mixie.
  2. Take 2 tsp oil in a vessel, add the toor dhal, 1/2 tsp of turmeric powder with a little water and cook it well till it becomes soft, take the cooked dhal out.
  3. Into that water, add tomatoes, onion (addition of any vegetables like brinjal, potatoes, carrot etc is optional), the asafetida and allow them to well-cooked.
  4. Mash the cooked dhal and a little tamarind juice (made with a a little water)
  5. Add the required salt ad after everything is cooked well, add 3 tsp of the sambhar powder made and cook it till the raw smell of the powder goes,dress it with coriander leaves and serve.
