Carrot Burfi
Ingredients
1. Grated carrot ... 1 cup
2. Grated coconut ... 1 cup
3. Milk ... 1/2 litre
4. Sugar ... 1 1/2 cup
5. Broken cashew nuts ... 1/2 cup
6. Ghee ... 5 tablespoon
Method:
- Fry the coconut and carrot separately without adding oil or ghee.
- Mix the sugar with the milk and heat it till the sugar dissolves,
all the while keeping on stirring.
- Add the fried coconut and carrot gratings and stir well. It will become
thick. After it comes rolling off when you stir, add the broken cashew nuts.
- Smear ghee in a tray, transfer the above mixture and make pieces
after it becomes cool.
