Carrot Chutney

Ingredients

Carrots- 2
Green chillies- 10-12
Garlic cloves- 3
Mustard seeds - 1tsp
Urad Dal - 1tsp
Red chillies- 2
curry leaves - 3-4
Lemon - 2
Turmeric Powder- a pinch
Slat to taste
Oil for seasoning

Method

  1. Peel the skin of carrots, grate them and keep it in a plate
  2. Grind the green chillies and garlic cloves in a mixer and mix this to the grated carrots.
  3. Add salt to this according to the taste.
  4. Take oil and as it heats up, put mustard seeds, red chillies, curry leaves , turmeric and urad dal and as the seeds start crackling add the whole mixture in it.
  5. Fry for 5 min.
  6. Switch off the stove and mix it nicely .
  7. After the mixture cools down a little bit add the lemon juice to it. and mix it well
  8. Thats it the carrot chutney is ready and it goes well with hot rice and stays up to one week without refrigerating it
