Carrot Chutney
Ingredients
Carrots- 2
Green chillies- 10-12
Garlic cloves- 3
Mustard seeds - 1tsp
Urad Dal - 1tsp
Red chillies- 2
curry leaves - 3-4
Lemon - 2
Turmeric Powder- a pinch
Slat to taste
Oil for seasoning
Method
- Peel the skin of carrots, grate them and keep it in a plate
- Grind the green chillies and garlic cloves in a mixer and mix this to the grated carrots.
- Add salt to this according to the taste.
- Take oil and as it heats up, put mustard seeds, red chillies, curry leaves , turmeric and urad dal and as the seeds start crackling add the whole mixture in it.
- Fry for 5 min.
- Switch off the stove and mix it nicely .
- After the mixture cools down a little bit add the lemon juice to it. and mix it well
- Thats it the carrot chutney is ready and it goes well with hot rice and stays up to one week
without refrigerating it
