Mamak Mee (Fried Noodles)

Ingredients

(prepare all ingredients first)
Hokkien Noodles 800 gms
Cooking Oil 1 cup
Eggs 4 eggs
Garlic (Diced finely) 4 cloves
Soy sauce 2 Tblsps
Red Chilli Paste 1-1/2 Tblsp
Chopped onion 1 bulb
Fish balls (Diced) 6 whole
Dry Prawns Pounded 1/2 Tblsp
Potato (boiled & Diced) 2 cups
Blachan (shrimp paste) 1-1/2 cm
Choy Sim (Veg.) Cut to 1 inch lengths
Fried Soy Bean Cake x 6 Diced
Tomato sauce 3-4 Tblsps
Lime juice 1 lime
Green Chilli (diced) 1 chilli

Method:

  1. Heat 1 tablespoon oil in hot wok (if you have it - use non stick) and stir fry eggs. Remove and keep aside.
  2. Heat balance of the oil and fry in order; garlic, onions, blachan, chilli paste, dry prawns, fish balls, potatoes, soya bean cake.
  3. Add Hokkien Noodles and fry, add choy sim and fry. Then add bean sprouts and stir.
  4. Sprinkle with Tomato sauce, Lime juice and add eggs and stir some more. Adjust soy and tomato sauce to taste.
  5. Sprinkle cut green chillie on top if preferred when serving.
  6. Serve hot.
