Hi, I am Priti Gomes from Mumbai, India. I would like to share this recipe which I learnt from my Mom. It can be had plain as an accompaniment or mashed in a salad of onions, tomatoes, cucumbers, etc. The good thing about it is you can eat the whole thing without throwing out the bones. Sardines in Oil

Ingredients

Sardines - 12 nos
Onions - 2 big
Tomatoes - 3 big
Green chillies - 4 or as per taste
Oil - 3 tablespoons
White pepper powder as per taste
Salt as per taste
Water

Method:

  1. Clean Sardines, apply slat and keep aside for one hour.
  2. Finely chop the onions, tomatoes, green chillies and toss with salt and pepper and keep aside for an hour.
  3. Heat oil in a pressure cooker.
  4. When the oil starts smoking, put in layers, first the onion mixture, then the sardines and top it with water. The water level should be about 2 inches above the whole mixture. DO NOT STIR THIS MIXTURE.
  5. Put the lid of the Pressure cooker and pressure cook first on high flame till the whistle is let out and then on slow flame for 30 minutes.
  6. Serve hot or cold. This can also be stored in the refrigerator for a week or so.
