Hi, I am Priti Gomes
from Mumbai, India. I would like to share this recipe which I learnt
from my Mom. It can be had plain as an accompaniment or mashed in a
salad of onions, tomatoes, cucumbers, etc. The good thing about it is
you can eat the whole thing without throwing out the bones. I hope

Sardines in Oil
Ingredients
Sardines - 12 nos
Onions - 2 big
Tomatoes - 3 big
Green chillies - 4 or as per taste
Oil - 3 tablespoons
White pepper powder as per taste
Salt as per taste
Water
Method:
- Clean Sardines, apply slat and keep aside for one hour.
- Finely chop the onions, tomatoes, green chillies and toss with salt and pepper and keep aside for an hour.
- Heat oil in a pressure cooker.
- When the oil starts smoking, put in layers, first the onion mixture, then the sardines and top it with water. The water level should be about 2 inches above the whole mixture. DO NOT STIR THIS MIXTURE.
- Put the lid of the Pressure cooker and pressure cook first on high flame till the whistle is let out and then on slow flame for 30 minutes.
- Serve hot or cold. This can also be stored in the refrigerator for a week or so.
