Hello, This is Vaijayanti Tamhankar from Adelaide,Australia.I had previously contributed the recipes of layered potato surprise,jhatpat broccoli, chop suey and carrot cake.Here is something different..a mushroom curry that's easy to make and is sure to bring you compliments.If you have always wondered about mushroom recipes try this one for its yummy taste. Easy Mushroom Curry

Ingredients

Button mushrooms 1 cup(alternatively use one medium sized can of button mushrooms)
Tomato puree 1 cup
Chilli powder 1 to 2 tsps (Adjust according to taste)
Methi seeds 1 tsp
Curry leaves 8 to 10
Mustard seeds 1 tsp
Udad dal 2 tsp
Rasam/sambar masala or madras curry powder 2 tsps
Oil 3 tsps
Sugar 2 to 3 tsps
Salt to taste

Method

  1. Wash the mushrooms well and cut each mushroom into half.
  2. Heat the oil,add the mustard seeds,as they splutter add curry leaves,udad dal and methi seeds.Fry for a couple of minutes.
  3. Now add the tomato puree,sugar,and chilli powder.
  4. Let it simmer gently for about 5-10 minutes.
  5. Add the mushrooms and cook again for about 10 minutes.
  6. Season with salt and garnish with fresh coriander.
  7. Serve hot with parathas/rice.
