Cold Tomato Soup
Ingredients
4 medium sized tomatoes
4-6 green chillies... adjust the chillies according to your own
taste.
2 tsps. of grated ginger.
2 glasses of cold buttermilk plain. IF the buttermilk is not cold.. then you can refrigerate it after the preparation is ready.
a bunch of coriander leaves.
sugar and salt to taste.
Method:
- Cook the tomatoes in a pressure cooker.
- Until then grind the chillies and the ginger in the mixer.
- Cut the coriander leaves finely.
- Make a puree out of the cooked tomatoes. Be careful to leave out the skin and the seeds.
- Take a bowl and add the puree to it. Next goes the plain buttermilk. If the buttermilk is too thick adjust the consistency according to your liking.
- Add the ginger-chilli paste, coriander.
- Depending on the ripeness of the tomatoes add the sugar and salt according to taste. Stir well.
- Keep the bowl in the fridge.
- The final taste must be of tangy tomatoes combined with some hot chillies...and the flavour of coriander and ginger.
