Hi, I am Noopur here. I am sending in this recipe for cold tomato soup which can be had with relish in the summers.

Cold Tomato Soup

Ingredients

4 medium sized tomatoes
4-6 green chillies... adjust the chillies according to your own taste.
2 tsps. of grated ginger.
2 glasses of cold buttermilk plain. IF the buttermilk is not cold.. then you can refrigerate it after the preparation is ready.
a bunch of coriander leaves.
sugar and salt to taste.

Method:

  1. Cook the tomatoes in a pressure cooker.
  2. Until then grind the chillies and the ginger in the mixer.
  3. Cut the coriander leaves finely.
  4. Make a puree out of the cooked tomatoes. Be careful to leave out the skin and the seeds.
  5. Take a bowl and add the puree to it. Next goes the plain buttermilk. If the buttermilk is too thick adjust the consistency according to your liking.
  6. Add the ginger-chilli paste, coriander.
  7. Depending on the ripeness of the tomatoes add the sugar and salt according to taste. Stir well.
  8. Keep the bowl in the fridge.
  9. The final taste must be of tangy tomatoes combined with some hot chillies...and the flavour of coriander and ginger.
