Hi,
I am Priya Patnaik, and live in the US. I am an MBA student, and hope to go back to India soon since I am really home-sick. The following is a Konkani recipe from my grandmom. Hope everyone enjoys preparing and eating it!

Konkani Tomato Chutney

Ingredients

6 medium-sized chopped red, ripe Roma tomatoes,
1-1/2 tsp jira seeds,
1-1/2 tsp coriander seeds,
3-4 cloves garlic,
1-1/2 tsp channa dal,
2 green chillis,
handful of coriander leaves,
handful of mint leaves,
2-3 tablespoons sesame seeds,
2-3 tablespoons roasted cashewnuts OR peanuts,
1/4 tsp haldi,
1/4 tsp chilli powder,
salt
oil.

Ingredients for seasoning:
1 tsp oil
1/4 tsp mustard,
1/4 tsp jira,
4-5 curry leaves.

Method:

  1. Heat oil, put in the jira, coriander seeds, channa dal, garlic, roast lightly.
  2. Add to it the sesame seeds, green chillis, the coriander and mint leaves, tomatoes, nuts
  3. Cook till almost done.
  4. Add haldi, chilli powder, salt and cook on low heat till the mixture is all dry and thoroughly cooked.
  5. Cool the mixture, and then grind it to a very smooth paste.
  6. Prepare a seasoning with the ingredients specified above, and pour it over the chutney paste.

Serve with hot rice, and dal.
