Hi, This is Priti Gomes again. My last recipe "Sardine in Oil" was a great hit. I received a lot of emails from people who tried it out and also from my friends. This has encouraged me to contribute another of my recipes. This recipe is my husband's specialty and he boasts that he can make it better than me. Goan Sausage Pulao

Ingredients

15-20 Rosary Goan Sausages (well all Goans will know what I am talking about) - chopped
2 cups Basmati Rice - washed and dried on a kitchen cloth for an hour
3 cups water
2 Onions - sliced
2 Tomatoes - finely chopped
2 green chillies - finely chopped
2 tsp ginger-garlic paste
1 tsp Garam Masala powder / any Pulao masala
1/2 tsp Turmeric Powder
2 Maggi cubes - small
Fresh Coriander Leaves - Finely Chopped
Potato French Fries - for garnishing
Salt to taste
Oil

Method:

  1. Heat oil in a pressure cooker.
  2. Add the sliced onions and fry till soft and pink.
  3. Add the ginger-garlic paste and sauti for a while.
  4. Then add the chopped tomatoes and green chilies and cook till oil leaves the sides of the vessel.
  5. Add in the Garam Masala / Pulao Masala, Turmeric Powder and stir for a minute or two.
  6. Put in the chopped sausages and fry well.
  7. The mixture will get quite oily.
  8. Put in the rice and salt, if required.
  9. Stir the rice for 5 minutes till it is fully coated with the masala.
  10. See that the rice does not break.
  11. Add 3 cups of water and crumbled Maggi cubes.
  12. Close the lid of cooker.
  13. First cook on high flame and once steam is let out cook on slow flame for 5 minutes.

Garnish with French Fried and chopped Coriander leaves.
