I am Mariette. This is a
favourite in the family. It is also very tasty and easy to make. I
normally marinate the brinjals with a paste made out of chillies,
turmeric, cumin seeds, garlic ground in vinegar together with salt.
This paste known as "meet mirsang" is made in a large quantity and is
used for frying fish or used for baking chicken, fish, etc.

Brinjal Salad
Ingredients
1 kg brinjals sliced
3 - 4 large onions sliced
1/2 inch ginger minced
3 chillies minced
vinegar to taste
salt to taste
1 cup thick coconut milk
Method:
- Marinate the sliced brinjals with masala of your choice for 1/2 hour.
- Shallow fry and keep aside.
- Mix minced items, add vinegar and salt.
- Layer brinjals and mixed onion salad.
- Lastly gently add coconut milk and serve.
- Can be eaten either hot or cold
- Powdered ginger can be added instead of fresh ginger.
