I am Mariette. This is a favourite in the family. It is also very tasty and easy to make. I normally marinate the brinjals with a paste made out of chillies, turmeric, cumin seeds, garlic ground in vinegar together with salt. This paste known as "meet mirsang" is made in a large quantity and is used for frying fish or used for baking chicken, fish, etc.

Brinjal Salad

Ingredients

1 kg brinjals sliced
3 - 4 large onions sliced
1/2 inch ginger minced
3 chillies minced
vinegar to taste
salt to taste
1 cup thick coconut milk

Method:

  1. Marinate the sliced brinjals with masala of your choice for 1/2 hour.
  2. Shallow fry and keep aside.
  3. Mix minced items, add vinegar and salt.
  4. Layer brinjals and mixed onion salad.
  5. Lastly gently add coconut milk and serve.
  6. Can be eaten either hot or cold
  7. Powdered ginger can be added instead of fresh ginger.
