Palak Chutney

Ingredients

Onions medium size 2
Dhaniya / Coriander seeds 1 teaspoon.

Oil for frying.

Method:

  1. Clean, wash and cut palak finely. Cut onions into small pieces. Slit the green chillies, soak tamarind in two tspns water, along with the jaggery.
  2. Fry onions well in oil. Fry dhaniya seeds till it emits an aroma, add hing and then the green chillies. Lightly fry palak till it is soft.
  3. Grind the dhaniya seeds and green chillies with tamarind and jaggery first. Then add palak to it and 3/4 of the fried onion and grind briefly the whole thing. Remove from mixie. Add the rest of the onions. Mix well.
  4. This chutney can be had with rice and ghee, or chapatis, parathas and even with roasted bread slices, besides stuffing for sandwiches.

One can also make Onion Chutney in this way.
