Cucumber Chutney
Ingredients
Cucumber - 1
1/2 coconut grated
gramdal - 1 cup
cumin seeds- 1 teaspoon
red chilli - 7-8
tamarind
jaggery or gur - a teaspoon
coriander
oil - 2 tsp
mustard - tsp
curry leaves (optional)
salt to taste
Method:
- Peel the cucumber and cut it into small pieces
- Put a spoon of oil in a kadai and fry the gramdal, cumin seeds and the chilli till brown in colour.
- Now put coconut, salt, tamarind,jaggery and the fried spices and grind into a slightly coarse paste...
- At the end put the chopped cucumber to the mixer and grind so that the cucumber is not completely ground
- Heat one spoon of oil and add curry leaves and mustard ... allow the mustard to splutter and add this to the chutney
This goes very well with chapathi and rice
