Hello, I am a big fan of bawarchi.com. tell u the truth, I have only learned how to cook from ur site. thanks for all the wonderful recipes from saroj's cookbook.

My name is Gunjan and I live in US, recently married. well, here's my favorite recipe which is being passed to me by my mum for bread pudding.

Bread Pudding

Ingredients

2 slices of bread (normal size)
1/2 Litre milk
sugar - 2 service spoons or according to taste
1-3 tsps of sugar to caramalize (caramalisation is the process of burning the sugar so that it gets brown in colour)...
1.5 tsp custard (it should be spoon level - not heaped on the spoon)
1/2 service sp milk to mix custard (save from milk you are going to use in pudding)

Method:

  1. Rub bread with your hands to disintegrate it fully in a pan.
  2. Add milk. Boil and keep stirring on medium or low heat to mix the bread in milk.
  3. If you see any lumps, crush them with a ladle or spatula whatever you are using for stirring.
  4. When they blend well add custard and stir well. cook the mixture and keep stirring. it should not stick to the bottom of the pan..
  5. When it becomes thick, add sugar to it and stir and mix well.
  6. Make it thicker (its should be really thick) on low-medium heat.
  7. In another pan or steel utensil or mould, caramalise sugar by putting the pan with the sugar on low flame and them medium.
  8. Pour the thick mixture you made before on the caramel sugar and cool the mixture.
  9. Then put it in the fridge. in a hurry, you can put a little bit of warm pudding in the freezer, but dun forget to take it out after 15-20 mins!!!
  10. Transfer the pudding in a little deep dish and serve chilled.
