Shawarma
Ingredients & Methods:
Humus
1/2 cup boiled chick peas
2 table spoon of white sesame seeds
salt to taste
1 tbsp vinegar
Grind the above to make a smooth paste
Garlic mayonnaise:
2 whole eggs
1 cup canola/veg oil
2 pods of garlic crushed
salt to taste
2 tbsp vinegar
1/4 tsp black pepper powder
1/4 tsp mustard powder
- Whip eggs in a blender till frothy.
- Add all dry ingredients & vinegar. Whip again for 1 minute .
- Slowly add the oil & keep whipping till it becomes a fluffy smooth paste & thickens. Never dump the oil.
Pickled cucumber:
1 medium cucumber
1/2 cup vinegar
2 pinches salt
2 pinches mustard powder
Cut cucumber length wise & mix in all the other ingredients.Keep in air tight container for 2 days.
French-fries:
1 large potato washes,peeled ,cut into long strips & deep fried .
Filling:
2 breasts of chicken deboned
salt to taste
1 tbsp of vinegar
1 tsp pepper
1 tbsp gingergarlic paset
- Marinate the chicken in the above over night in the refrigerator.
- Bake or stem till tender. Shred & grill it or saute in nonstick pan with very little oil.
- Use a pita bread or phulka.
- Put cooked chicken in the centre length wise.Keep pickled cucumbers length wise.Roll it.Serve hot with french fries,humus,garlic mayonnaise.
- It sounds lengthy but mayonnaise,cucumbers & humus can be prepared & stored in fridge a week ago. The rest is very easy.
- I know once you eat it u cant resist making another time.
- It is a whole meal.When served with fresh mixed fruits juice it's simply great!
