Carrot Burfi
Ingredients
Grated carrot ... 1 cup
Grated coconut ... 1 cup
Milk ... 1/2 litre
Sugar .... 1 1/2 cup
Ghee ... 5 tablespoon
Broken cashew nuts ... 1/2 cup.
Procedure:
- Fry the grated carrot and grated coconut separately
without adding oil or ghee (dry fry)
- Add the sugar to the milk and boil it well until I the
sugar dissolves, all the while stirring.
- Add the fried carrot and coconut and keep on stirring.
It will become thick.
- After it is well cooked -- I.e. comes off from the pan
without sticking on to it add the broken cashew nuts.
- Smear ghee in a tray and the transfer the mixture and
after it becomes cool, cut into pieces.
