Hi,
I am Sridharan Krishnamoorthy, a Software Consultant in NJ, USA. As a bachelor, I try out various recipes. I love sweets and here you go with my favorite - Badam Kheer plus Multi-Nut Shake. This sweet drink is made of Almonds, Pistachios, Cashews, Milk, Sugar, Cardamom and Saffron. It is a very healthy drink for everyone (especially growing kids and pregnant women); it provides most nutrients we need in a glass. Add any more healthy nuts that you like and make it even more delicious and healthier !! I make this for most parties and it's a hit with all my Indian and American friends.

Multi-Nut Shake

Ingredients

Badam (Almonds) - 1 cup (about 35-40 whole almonds)
Pista (Pistachios) - 1/2 cup (about 15-20)
Kaju (Cashews) - 1/4 cup diced into small pieces
Elaichi (Cardamom) - 1 tablespoon
Saffron - 1/2 teaspoon
Whole Milk - 4 cups
Sugar - 1-1/2 Cups
Ghee - 1-1/2 tablespoon

Method:

  1. Boil 2 cups of water and soak the almonds in it for 45 minutes.
  2. Wash half of the pistachios and keep aside. Clean the rest of the pistachios and the cashews and keep aside.
  3. Soak and dissolve the saffron in 1/4 cup of hot water.
  4. Peel the almond skins and discard the skins.
  5. Blend the almonds and the washed pistachios with 1 cup of water in the blender (mixie) and make it into a fine paste.
  6. Boil this paste to get rid of the raw smell. When it boils, remove it from the stove - keep aside.
  7. Boil the milk in a kadai or heavy-bottom container and simmer it for about 15-20 minutes. Keep stirring frequently to avoid the milk getting burnt. When the milk is well-boiled, add the badam-pista paste to it and mix well. Cook for 5-6 minutes so that the flavor blends well with the milk. Add sugar to this mixture and mix well. Let it cook for another 5 minutes and remove from stove.
  8. Roast the cardamom in 1/2 teaspoon of ghee and powder it in the blender. Ghee-roasted cardamom enhances the aroma of the food.
  9. Roast the rest of the pistachios and cashews (both finely diced) in 1 tbsp. of ghee and keep aside.
  10. Mix cardamom powder, roasted nuts and the saffron liquid to the Kheer.
  11. Chill this in the refrigerator and serve in tall glasses. Wow.... you have a yummy dessert plus a good and healthy drink. It tastes great as a hot drink also !! Kids just love it !!

You may add vanilla / kesar / kaju / pista ice-cream and make it into an Ice-cream float-shake also.
