Tomato-Mint Pulao
Ingredients
Rice - 2 cups
1 cinnamon stick
2-3 bay leaves
4-5 cloves
4-5 pepper corns
1 medium sized onion chopped
1 large tomato finely chopped
1 small bunch of mint (pudina)
oil - 3 tbsp
jeera - 1tbspn
2 green chillies chopped
coriander for garnishing
lemon juice- 1/2 tbspn
salt as per taste
Method:
- Cook rice with 4 cups of water in a rice cooker or pressure cooker with the spices.
- Let it cool.
- In a kadai add oil.
- Add jeera and fry till brown. Add green chillies.
- Then add onion and tomatoes. Fry well.
- We fry tomatoes with onion so that the tomato juice is mixed with onions well.
- Then add the rice. Mix well.
- Add salt lemon juice and chopped pudina leaves. Mix well.
- Garnish with coriander and serve steaming hot.
