Fish in Sweet & Sour Sauce
Ingredients
1 kg fish fillet
1 carrot
1 green pepper
2 sticks celery
3 tomatoes
3 tablespoons peanut oil
4 tablespoons vinegar
4 tablespoons sugar
1 teaspoon very finely chopped fresh ginger
Salt to taste
1/2 tablespoon cornflour (optional)
Procedure
- Skin the fish and cut into bite-sized pieces.
- Cut the carrot and pepper into match stick strips
- Cut the celery diagonally
- Drop the vegetables into boiling water and simmer for 5 minutes.Drain
- Skin the tomatoes,remove seeds and chop roughly
- Heat oil in a small pan and fry the fish until cooked for about 5-7 minutes
- Remove the fish and drain
- Pour off excess oil,add vinegar,sugar,ginger,salt,cornflour all the vegetables and 3/4 cup water
- Bring to the boil, stirring.
- Add the fish and simmer for 2 minutes
- Serve hot
