Hi, this is Prafulla and I would like to share with you all a recipe that has been handed down to me by my grandmother; and is a favourite in the entire family.there is great excitement when it is known that nuchchina unde is being prepared. it is basically a recipe of rural Karnataka. Nuchchu in kannada is split/broken cereal. grains while being winnowed in the fields got broken and were sieved to separate from the whole grains. the nuchchu was kept aside and used at home and the whole grains sent to the market. now we don't see much of broken grains, except broken wheat, as they are used in various ready to eat food items.

Spicy Steamed Dal Balls

Ingredients

chana dal 2 measures (1 measure=250 grams)
green chillies 12
fresh coconut 1(grated)
ginger 1 inch
coriander 1 small bunch, finely chopped
haldi 1 teaspoon
hing 1 pinch
salt to taste

Method:

  1. Soak the chana dal for an hour and a half. drain all the water and grind coarsely into a dry paste.
  2. Grind the rest of the ingredients except coriander into a dry paste. mix with the above dal paste and coriander. mix well.
  3. Shape into elongated balls. that is hold a palmful of the dal paste and keep rolling in the palm. do not use both palms.
  4. Place them in idli trays and steam for 10 minutes.

The nuchchina unde is ready and tastes just yummy with white butter, kadi, coconut chutney, sauces, ketchups or just by itself.

Bon appetite!
