I am Priya from Mo- US, my best friend Sima who is now in Milwauke gave me this recipe. Try this and let me know if you liked it, my husband loves it:). She is Iranian and we added our Indian touch to this rice.

Iranian/Indian Pulo

Ingredients

Basmati Rice - 1 cup
Lima beans - 1 cup Frozen (optional)
Spring Onions - 1 or 2 strands
Onion - 1 sliced very thin
Oil - to fry onions
Butter - 1 tbsp or more
Garlic powder - to sprinkle (approximately 1 or 1/2 tsp)

Method :

  1. Wash rice and soak it in salt water for 10 mins
  2. Take the thin sliced onions and put it in a pan. After about 2 mins add oil for deep frying, about 4/5 tbsp. Let this cook on medium fire. Keep stirring it constantly to avoid burning. Once its crispy golden brown spread it out in a plate and let it cool.
  3. Take the rice and put it in a microwaveable dish and add 3 1/2 cups of water & lima beans . If your are not adding lima beans then just add 2 1/2 cups of water.
  4. Microwave this rice for about 12 mins and remove it from the microwave and now add the spring onions, cripy fried onions, sprinkle the garlic powder. Add salt now - IF NEEDED. With a fork mix all this carefully without smushing the rice.
  5. At this point if you feel u need some more water please add some hot water since the lima beans is capable of drinking up the water:)
  6. Stick it back in the microwave for about 15 mins and in the middle just check it ...
  7. Remove it , add butter generously to it and sprinkle parsley or cilantro (coriander leaver) or both!!
  8. We are novices in cooking, so pls feel free to make your own adjustments and go ahead and be adventurous : This quantity should be ok for 2/3 persons

    Some Tips :

    1. You can add any frozen vegetable or pre-boiled vegetable to this rice.
    2. The crispy brown onions, you can deep fry them in large quantities and store them Use them as a garnish. Just be careful to spread it out when it cools and remember to slice it very thin and remove it from fire when its a shade of dark golden brown.
    3. While cooking rice in the microwave, to avoid it getting all dry, add oil or butter to the rice and stir it with a fork in between.
    4. Just add cardamom / saffron/ cinnamon/ fried zeera/ bayleaf in your rice to break the routine.
    5. Best way to get maximum use out of(Iranian) saffron :Boil little water, crush 5/6 strands of saffron and add to this and let it cool and store it in a container in the fridge. You can just add the concentrate water to your dish: Most of you may know all this.....these are for those NOVICES like moi : This quantity should be ok for 2/3 persons
