I am Arun. I would like to submit an easy and lite curry. You can substitute the egg with any vegetable.

Yummy Egg-Lite Curry

Ingredients

Eggs - 4 (hardboiled and halved)
Onion -1 large(finely minced)
Tomato - 3 medium (chopped)
Oil - 1tsp
Salt
Peas -1 cup
Light Coconut Milk - 1/2 cup
Cumin powder - 1/2 tsp
Coriander powder - 1/2 tsp
Turmeric - 1/4 tsp
Cilantro - finely chopped
Lemon juice -1 tsp

Grind the following to a smooth paste

1/2" Ginger
2 Garlic flakes
1/2 tsp Red Chilli
Poppy Seeds -1/2 tsp (Soak for an hour before grinding)
Bell Pepper - 1/2 medium (this gives a unique flavor)
Onion - 1/2 medium
Cinnamon stick -1
Cloves - 6
Cardamom - 1 pod
Fennel Seeds - 1 tsp
Green Chilli

Method:

  1. Saute onions in oil for 5 minutes.
  2. Add the paste and cook until the it smells good.
  3. Add tomatoes, peas, coconut milk and heat until it forms a mush.
  4. Halve the eggs, remove the yellow part and add to the gravy and stir for a couple of minutes.
  5. Turn off the gas, add lemon juice and garnish with cilantro.

The curry is ready. Instead of serving it with rice and rotis, try serving this yummy recipe with idiappam(thin rice noodles).
