Hi! this is Jaimmie Caudell! I became a vegan about 4 years ago when I was 11 I found this neat recipe...just wanted to share it!

Mexican Tofu Casserole

Ingredients

1 box Spanish rice
1 can 14.5 tomatoes
1 can refried beans
1 package firm tofu
2 cups soy cheese
1 package taco seasoning (check ingredients)
1 bag torilla chips

Method:
Cook rice according to the box (mix in tomatoes)...fry tofu then add taco seasoning and a little water. In medium casserole dish, crunch up tortillas on bottom, then layer with beans then tofu...then the rice top with soy cheese and more torilla chips ....bake at 350 for about 20 min.
Serves about 4
