I am Suneela Joshi. This is a very easy and healthy salad. Both of my kids and my husband love it. Key is to have a very fresh and best variety of baby spinach. I myself had never though that I could eat raw spinach but I love this salad. Tastes better if you put a little sugar in the dressing but for people who don't like sweetness in food, I have put it in 'to taste' ingredients. Hope you all like it. Email: Suneela.Joshi@gedas.com

Baby Spinach Salad

Ingredients

1 packet Baby spinach salad (in most markets in US you get the prewashed variety, that works best because it is not soggy)
1 large cucumber - sliced
2 large tomatoes - cut into large chunks
2 hot peppers - cut into large chunks
10 almonds - Microwave almonds for one minute , cool and then slice
Optional - carrots cut into pieces
grapes or oranges
black olives - canned - drained and washed.

Dressing
2 table spoons extra virgin olive oil
half cup Orange juice
1/2 tea spoon garam masala
1/2 tea spoon each ginger and garlic paste
salt, sugar, black pepper powder and chilli powder to taste.

Method:

Mix the salad ingredients
Separately mix the dressing very well and pour over salad.
