Brinjal Masala Curry
Ingredients
Small brinjals - 6 to 10 nos
Turmeric powder - 1/4 tsp
Oil
Salt
Grind:
Sombu(fennel) - 1 tsp
Cinnamon - 1 inch long
Cloves - 2 nos
Peppercorns - 1/2 tsp
Cashews - 5 if whole
Ginger - a small piece
Garlic - 2 cloves
Green chillies - 2 nos
Shredded coconut - 2 tsp
Onion - 1/2 (cut into pieces)
Coriander leaves - a handful
Method:
- Grind the ingredients under Grind,adding little amount of water and salt according to the taste.Make it in to a fine paste.
- In a kadai add little oil and saute the ground masala with little turmeric powder till it looses its raw smell.
- Cut the whole brinjals half way through like + and stuff the masala in it.
- In the same kadai add little more oil and add the stuffed brinjals and turn them slowly as it gets cooked on the sides.
- Add little water and close the kadai as the brinjals will get cooked fully.Do not turn the brinjals often as it will loose its shape.
- When there is no water in the kadai take it out from the stove and enjoy with your rice
