Brinjal Masala Curry

Ingredients

Small brinjals - 6 to 10 nos
Turmeric powder - 1/4 tsp
Oil
Salt

Grind:
Sombu(fennel) - 1 tsp
Cinnamon - 1 inch long
Cloves - 2 nos
Peppercorns - 1/2 tsp
Cashews - 5 if whole
Ginger - a small piece
Garlic - 2 cloves
Green chillies - 2 nos
Shredded coconut - 2 tsp
Onion - 1/2 (cut into pieces)
Coriander leaves - a handful

Method:

  1. Grind the ingredients under Grind,adding little amount of water and salt according to the taste.Make it in to a fine paste.
  2. In a kadai add little oil and saute the ground masala with little turmeric powder till it looses its raw smell.
  3. Cut the whole brinjals half way through like + and stuff the masala in it.
  4. In the same kadai add little more oil and add the stuffed brinjals and turn them slowly as it gets cooked on the sides.
  5. Add little water and close the kadai as the brinjals will get cooked fully.Do not turn the brinjals often as it will loose its shape.
  6. When there is no water in the kadai take it out from the stove and enjoy with your rice
