Easy Mushroom Curry
Ingredients for Cooking
a.. Mushrooms - 1lb.
b.. Plain Yogurt(curd) - 1-1/2cup
c.. Red chillies - 7-8
d.. Oil - 3tbs.
e.. Onion - 2 small
f.. Garlic chopped - 5
g.. Ginger chopped - 1 small piece
h.. Turmeric powder - ˝ tsp.
i.. Cinnamon - 1stick
j.. Cloves - 3
k.. Cardamom - 3
l.. Coriander seeds - 1 1/2tbs.
m.. Cilantro (coriander leaves chopped for garnishing)
n.. Salt according to taste
Method:
- Wash and cut the mushrooms in 4 slices.
- Heat 1 tsp.oil in a pan and roast the red chillies, coriander seeds 'til brown in color and drain and keep it aside
- Dry roast the cardamom, cloves and cinnamon.
- Then grind everything together into fine powder.
- Fry ginger garlic with one sliced onion (till slightly light brown) in 1tbs. of oil and blend into smooth paste.
- Heat the remaining oil in a pan and fry the another sliced onion till light brown in color. Then add mushrooms and fry till mushrooms are half cooked.
- Add curd and ground spices powder, fried paste of (ginger, garlic, onion) and turmeric and salt.
- Keep stirring and simmer for a couple of minutes.
- Cook till done or till oil is separated from gravy.
- Garnish with chopped cilantro. And there u go.Mushroom curry is ready. Enjoy!
Serving suggestion:
Serve hot with parantha/chappatti or even rice too.
