Hi I am Vidya Leelakrishnan from Florida.This recipe is a real hit in parties.This recipe of brinjal is very easy and tasty.You can replace brinjals with bitter gourd(karela) and then proceed with the recipe.

Easy Brinjals

Ingredients for Cooking

4 Small brinjals or Bittergourd
2 Tomatoes
2 tbsp dhania powder
1 tsp Garam masala
1 tsp turmeric
1 tsp red chili powder
Salt as per taste
4 tbsp Oil or Ghee
1/2 bunch Cilantro
1 chopped onion
4 cloves of garlic

Method:

  1. Take a deep bottom pan or kadai(non-stick).
  2. Add oil and fry chopped onion and crushed garlic.
  3. Stir the onion till the color changes into light brown.
  4. Slit the brinjals vertically without cutting the crown of brinjal.
  5. After cutting the brinjals immediately add it to the kadai.
  6. Add turmeric,red chili powder, salt, dhania powder, garam masala and tomatoes and stir it.
  7. Cover the kadai with a perforated lid and let it cook without adding water.
  8. After the brinjals are done add chopped cilantro.
  9. Serve this dish with chapatti or puri.

Useful Tips:

  1. Immediately use the brinjal after you cut it or else it will taste bitter.Otherwise put the cut  brinjals in plenty of water and keep it in water(preferably little bit of salt)until required.

  2. Make sure you always wash the bittergourd first, and then chop this vegetable.Because it will taste more bitter if washed later.

  3. If any bittergourd curry or any other gravy recipe calls for sugar then instead of using sugar add carrots.It is the best alternative.

  4. Whenever you chop or crush the garlic, always add little bit of salt and then chop.The salt will blend with garlic and it will taste good.

  5. Whenever you use turmeric in any of your recipe always add the turmeric while frying the onions or fry it in plain oil.The raw taste of turmeric will go away.
