Hi, I am Andrea. I love food and especially the stuff my mom (Gladys) makes. Friends always raved about her cooking. So here's one of my all time favourites, its quick and easy .

Egg Bhaji

Ingredients for Cooking

6 eggs (boiled and shelled)
2 tomatoes
3 green chillies
1inch ginger sliced
2 large onions
some coriander to garnish
1/2 tsp haldi powder
1 tsp chilli powder
1/2 tsp garam masala
salt to taste

Method:

  1. Slice the onions, chillies,ginger lengthwise and fry in kadhai until onions golden brown.
  2. Dice tomatoes into small pieces and add to onions. Cook for about 5 mins.
  3. Add all the powders and cook for another 5-6 minutes.
  4. Halve the boiled eggs and add to mix. Mix eggs and masala gently until eggs are nice coated with masala.
  5. Cover and cook for another 10 minutes on medium flame .
  6. Garnish with coriander and serve.
