Hi friends, This is Shammi again with my second recipe.hope u must have tried my Brinjal masala curry. This is a very simple one and u can prepare two different dishes. One, egg fry and the second one masala rice with the same masala u make for the egg.

Masala Egg Fry

Ingredients for Cooking

Eggs(Hard Boiled) - 4
Oil (Canola )

  Grind:
Cinnamon - 1 inch long
Cloves - 2 nos
Peppercorns - 1/2 tsp
Cashews - 3 if whole
Ginger - a small piece
Garlic - 2 cloves
Green chillies - 2 nos
Shredded coconut - 2 tsp
Onion - 1/2 (cut into pieces)
Coriander leaves - a handful
Salt

Method:

  1. Grind the ingredients under Grind,adding little amount of water and make it into a   fine paste.Do not add much water.
  2. Cut the eggs into halves and with the tip of your finger just spread water in the yolk and white .
  3. Spread the masala paste on the yolk and white and keep it aside. Do this to all the halves.
  4. Heat a kadai and add little oil and place the egg, masala side down.
  5. Have the stove in low  heat or medium.If its in high flame the masala will become brown and it wont  get cooked  inside..
  6. Leave the egg for few mins and take out of the kadai and enjoy. if the egg doesn't come out of the kadai means the masala still didn't get cooked, so wait. 

With left over masala:

  1. If u have left over masala u can saute it till it looses its raw smell mix it with white rice and   ur masala rice is ready.
  2. Taste it and add little more salt if needed.
