I am Padmini from Uttar Pradesh. I visited this site to get some recipes of dishes my mom and dad used to make but I didn't find a UP cuisine section or many contributions for such recipes, so am posting some of the recipes I know. Enjoy Dal Bhari Puri, more to come. .

Dal Bhari Puri

Ingredients- Atta - 2-3 cups
ghee - 2 tbsp
Chana Dal - 1 cup
Cumin seeds - 1 tsp
Dried red chilli to taste
salt to taste
oil
Method for Filling:

  1. Soak chana dal overnight
  2. Heat oil in a pan, add cumin seeds, red chilli, then add dal, fry till golden brown/red.
  3. Powder it in mixer after it has cooled down.

Method for Puri:

  1. Mix ghee and atta, then knead a not-so-soft dough out of it.
  2. Break off to a table tennis - ball sized bit of dough.
  3. Roll once or twice (so it is a very thick and small round).
  4. Place 2 tsp (or per choice) on the round.
  5. Gather the sides together and make a flat, ready to roll ball (make sure no mix is showing).
  6. Roll this into a puri and fry in oil.
  7. Serve with dahi.

If you want to avoid oil, you can also use this filling to make parantha.
