Hi, I am Veda from Mumbai .Lemme share my Ma-In-laws recipe of Coffee Pudding . Its our family's favorite dessert , which my 'Mummy' treats us to ,everytime we meet up during holidays .  .

Coffee Pudding

Ingredients: 

( For 2 servings) I make 6 times the given  proportion  to serve   10-11  people. 

  Milk                                  1 cup
Sugar                                6 tbsps
Custard Powder                 1 tbsp
Nescafe Powder                3/4 tbsp
Cocoa/Chocolate Powder   1 tbsp
Gelatin                             1/2 tsp
Nutmeg(jaiphal) +              2 pinches
Dalchini powder   Chopped Walnut                1/2 cup
Vanilla Essence                1/4 tsp
Fresh Cream                     1 cup
  Preparation :

  1. Pour cold milk .
  2. Add sugar + custard powder ( premixed to a smooth paste with little milk).
  3. Put the mixture on  slow-medium flame .
  4. Add gelatin ( premixed with  4-5 tbsps of water) to it .
  5. Keep stirring  till the custard thickens .
  6. When   it forms a smooth creamy paste  , remove from flame .  
  7. Mix cocoa+coffee+ jaiphal powder with some of the above mixture to make a fine smooth paste .
  8. This is to ensure there are no granules or knots later.
  9. Pour it slowly into the above  mixture .
  10. Beat well to form a smooth chocolaty paste .
  11. Add the vanilla  essence. 
  12. Add the chopped walnuts . Mix well .   
  13. After 10-15 minutes, transfer the contents into the dessert bowl  . 
  14. Place it  in the refrigerator .
  15. When cool,  pour whipped cream ( sweetened  or un sweetened  as per your liking ) .
  16. Mix well  if you like the two flavours to blend .
  17. Else just mix lightly  to have marbled layers of brown  and white . 
  18. Serve cool .  

Tips :

     
  1. Use a nonstick kadai to avoid  burning of the mixture and also non messy preparation .
  2. Take care you are stirring the mixture when on flame periodically .
  3. Do not  chill the dessert .  

Enhancers:

  1. Sprinkle  chocolate chips / grated chocolate before serving .
  2. Pierce wafer chocolate rolls to make it look real tempting .
