Coffee Pudding
Ingredients:
( For 2 servings) I make 6 times the given proportion to serve 10-11 people.
Milk 1 cup
Sugar 6 tbsps
Custard Powder 1 tbsp
Nescafe Powder 3/4 tbsp
Cocoa/Chocolate Powder 1 tbsp
Gelatin 1/2 tsp
Nutmeg(jaiphal) + 2 pinches
Dalchini powder
Chopped Walnut 1/2 cup
Vanilla Essence 1/4 tsp
Fresh Cream 1 cup
Preparation :
- Pour cold milk .
- Add sugar + custard powder ( premixed to a smooth paste with little milk).
- Put the mixture on slow-medium flame .
- Add gelatin ( premixed with 4-5 tbsps of water) to it .
- Keep stirring till the custard thickens .
- When it forms a smooth creamy paste , remove from flame .
- Mix cocoa+coffee+ jaiphal powder with some of the above mixture to make a fine smooth paste .
- This is to ensure there are no granules or knots later.
- Pour it slowly into the above mixture .
- Beat well to form a smooth chocolaty paste .
- Add the vanilla essence.
- Add the chopped walnuts . Mix well .
- After 10-15 minutes, transfer the contents into the dessert bowl .
- Place it in the refrigerator .
- When cool, pour whipped cream ( sweetened or un sweetened as per your liking ) .
- Mix well if you like the two flavours to blend .
- Else just mix lightly to have marbled layers of brown and white .
- Serve cool .
Tips :
- Use a nonstick kadai to avoid burning of the mixture and also non messy preparation .
- Take care you are stirring the mixture when on flame periodically .
- Do not chill the dessert .
Enhancers:
- Sprinkle chocolate chips / grated chocolate before serving .
- Pierce wafer chocolate rolls to make it look real tempting .
