BRINJAL DELIGHT

Ingredients

  Brinjals                  1/2 kilo, washed and halved, keeping the stem intact
Onions                   2 nos, sliced
Garlic                      5 nos, sliced
Ginger                    1 teaspoon, pasted
Tomatoes                1 no, sliced
Jeera                       1/2 teaspoon
Bayleaf                    2 nos
Mustard oil               3 tablespoons
Turmeric powder        1/2 teaspoon
kashmiri chilli powder  1/2 teaspoon
sugar                      1/2 teaspoon
salt                          to taste
coriander leaves        for garnishing

  Method

 

  1. Heat the oil and lightly fry the halved brinjal and keep aside.
  2. To the remaining oil add a pinch of sugar and the jeera.
  3. Then add the  sliced onions and the garlic.
  4. When they turn golden add the ginger  paste and tomato and cook for some more time. 
  5. Then add the turmeric, chilli powder salt and  sugar and add a liitle water.
  6. Cook for sometime.Then add the bayleaf and the brinjals.
  7. Add a little more water if required. 
  8. Cook till oil separates. Remove from fire.
  9. Garnish with coriander leaves and serve hot with chappatis
