BRINJAL DELIGHT
Ingredients
Brinjals 1/2 kilo, washed and halved, keeping the stem intact
Onions 2 nos, sliced
Garlic 5 nos, sliced
Ginger 1 teaspoon, pasted
Tomatoes 1 no, sliced
Jeera 1/2 teaspoon
Bayleaf 2 nos
Mustard oil 3 tablespoons
Turmeric powder 1/2 teaspoon
kashmiri chilli powder 1/2 teaspoon
sugar 1/2 teaspoon
salt to taste
coriander leaves for garnishing
Method
- Heat the oil and lightly fry the halved brinjal and keep aside.
- To the remaining oil add a pinch of sugar and the jeera.
- Then add the sliced onions and the garlic.
- When they turn golden add the ginger paste and tomato and cook for some more time.
- Then add the turmeric, chilli powder salt and sugar and add a liitle water.
- Cook for sometime.Then add the bayleaf and the brinjals.
- Add a little more water if required.
- Cook till oil separates. Remove from fire.
- Garnish with coriander leaves and serve hot with chappatis
