Yellow Pumpkin Soup
Note: All ingredient quantities are ap prox.
Ingredients
Yellow Pumpkin - 200 gms piece
Red chilli powder - 1/2 tsp
Salt to taste
Butter (optional)
Method
- Deseed and clean the pumpkin.
- Sprinkle some water on the pumpkin piece, microwave on high for 7 minutes. (Alternatively, you can also steam it in the pressure cooker for
1-2 whistles).
- After it cooks, place it in cold water for 2 minutes
- Scoop out the pulp, carefully avoiding the skin.
- Puree in a blender until smooth.
- Add salt, red chilli powder, water and microwave in a deep bowl for 4 minutes.
- Serve hot with a dollop of butter.
This soup serves 2 persons.
