My name is Prashanti. I work for Oracle India. Stay in Bangalore with my husband Srinivas. I really enjoy cooking new varieties and am constantly on the look out for easy, quick recipes which give great results. I use the Microwave for most Indian cooking too! This recipe can be changed for other fruits like pineapples, bananas & strawberries.

Lichee Sponge Cake

Ingredients

Maida (flour): 1 cup
Condensed milk - 1/2 tin (200 g)
Baking powder - 1 tsp
Cooking soda ( Soda bicarb ) - 3/4 tsp
Oil - 1/3 cup
Canned lichees - 1/2 cup
Water - 1/4 cup
Ghee or butter for coating glass bowl

Method

  1. First sieve the maida, baking powder, cooking soda together.
  2. Now put all the ingredients in a mixie and grind them well.
  3. Take a round glass bowl, coat it inside with ghee or butter.
  4. Pour batter into glass bowl. 
  5. Microwave on 60-80% power for 10 mins. 
  6. Let it stand for a couple of mins before inverting onto a dish..!
