Carrot Cake

Ingredients

Carrot grated...........250gm
Corn oil(or) any oil....250 ml
Wheat flour..............250gm
Egg.........................3
Jaggery....................250gm
Dry fruits(optional).....250gm
Vanilla essence.........1tsp
Cinnamon powder......1tsp
Baking powder ..........1/2tsp
Baking soda.............1/4tsp

Method

  1. Grind carrot and oil in a mixer, this add color to the cake
  2. Separate eggwhite and yolk.
  3. Mix eggyolk flour baking soda and baking powder cinnamon powder,vannila essence.and jaggery.
  4. Make the egg white into fluffy,fold in the yolk and flour mixture to white.
  5. If your adding fruits, dust the fruits with little flour and mix in the end.
  6. Bake the cake in the microwave preheated, at 180 degree for 20 to 30 minutes (in the convection mode)
  7. Stays fresh in the room temp for 2 days,stays fresh for 2weeks in refrigerated.
  8. Cake tastes very good when  we keep it for few days,
