Masala Eggplant Sandwich

Ingredients

1 Large Eggplant
1 Can of Tomato sauce
Oil to fry
Garlic (minced) or  Lasaniyu marchu (Available in any grocery store)
Chaat masala
1 Cup Shredded Mozarella cheese
Red pepper powder
Salt
Green pepper (for variation)
Your favorite sandwich bread

Method

 

  1. Cut eggplant in small strips.  Avoid seeds.
  2. Deep fry them in oil till they are crispy and drain them on paper towel since they absorb a lot of oil.
  3. Let tem cool down a little.
  4. In microwave proof bowl transfer fried eggplant. 
  5. Mix in tomato sauce, garlic or Lasaniyu marchu, red pepper powder, chaat masala and salt. 
  6. Garlic is fine but lasaniyu marchu works great for me, and if you are using it, reduce the amount of red pepper powder.
  7. Cook in microwave for 2 minutes and then add cheese to it. 
  8. Take out the bowl after 5 minutes, mix it and put it back again for 5 more minutes.
  9. Stuff the eggplant between slices of bread. 
  10. For me, the sandwich rolls work great.  Just cut in the middle and stuff eggplant and enjoy.

This is really easy and quick recipe.  The only real time taking step is cutting and frying eggplant. But you can do that on weekends and store it in fridge after they cool down.  And when you want to eat it, you can just bring it out, mix the ingredients and put in microwave and in 10 minutes without much efforts, you have a very delicious recipe.  I personally hate eggplant but this one dish that I crave over and over just because its very tasty.  You can also add strips of green pepper along with eggplant for variation.  If you have time, you can also bake instead of cooking in microwave.  For my busy schedule, microwave works.
