Dates & Walnut Cake

Preparation Time: 20 mts
Cooking Time: 45 mts
Serves/Makes: 30-35 pieces

Ingredients

200 gms - Dates (seedless)
80 gms - Walnuts
1 1/2 cup - Flour (Maida)
1 tsp - Soda Bi-carb
1/2 tsp - Baking soda
1 cup - Hot Boiling Water
3 - Eggs
1 cup - Sugar Powder
100 gms - Salted Butter
1 tsp - Vanilla Essence

Method

  1. Sieve the Flour,baking soda,soda bi-carb 3-4 times and keep it aside.
  2. Chop the dates and walnuts finely.
  3. Beat the egg and keep it aside.
  4. Put the chopped dates, salted butte r,sugar powder and hot boiling water in a mixing bowl and Mix thoroughly but not too much.
  5. Add the beaten eggs alternatively with the flour in the mixing bowl till both are used.
  6. Keep mixing the mixture.
  7. Lastly add the chopped walnuts and the essence.
  8. Bake th e cake in a oven at 150 degrees for 45 mts.

The method can be used to bake a Mix Fruit Cake by replacing the dates and walnuts.
