Hi, I am Vidhya. Here is the recipe for a rare and delicious south Indian food which my mother-in-law taught me. Everyone in my family loves it. Since lot of vegetables are used, its very healthy.Try this and enjoy :)

Rice Usili

Ingredients

Rice - 1 cup
Moong dal(yellow) - 1/4 cup
Potatoes - 1 medium
Brinjal - 1 large
Onion - 1 medium
Green Peas - 1/4 cup
Carrot - 1 medium
Green chilies - 4
Coconut grated - 1/4 cup
Oil, mustard seeds, urad dal & curry leaves for seasoning.
Coriander leaves for garnishing.
Salt to taste.

Method

  1. Dice potatoes and carrot.
  2. Cut brinjal and onions into lengthy slices.
  3. Slit green chilies.
  4. Fry moong dal in a dry pan and keep aside.
  5. Add oil and allow mustard seeds to splutter. Then add urad dal and fry.
  6. Add curry leaves and green chilies.
  7. Add onions and fry till tender.
  8. Add other vegetables and fry for 10 minutes.
  9. Add grated coconut.
  10. In a pressure cooker or rice cooker, pour 4 cups water, add rice, moong dal and fried vegetables. Add salt for taste.
  11. Allow it to cook and garnish with coriander leaves.
  12. Serve hot with sambar and pappad.
