Potato Stew

Ingredients

Potatoes - 1/2 kg
Small onions - 10-12
Ginger - 1 piece
Green chillies - 4
Coconut - 1 half (grated) ground to fine paste
Curry leaves

Method:

  1. Dice the potatoes into small pieces and boil in water till half done.
  2. When half done, add chopped chillies, chopped ginger and sliced onions.
  3. When potatoes are done, add salt to taste and coconut ground into fine paste.
  4. When it boils, remove from fire and add coconut oil and curry leaves.
  5. Tastes delicious with rice or idli/dosa or even rotis. Hope you enjoy it.
