Potato Stew
Ingredients
Potatoes - 1/2 kg
Small onions - 10-12
Ginger - 1 piece
Green chillies - 4
Coconut - 1 half (grated) ground to fine paste
Curry leaves
Method:
- Dice the potatoes into small pieces and boil in water till half
done.
- When half done, add chopped chillies, chopped ginger and sliced
onions.
- When potatoes are done, add salt to taste and coconut ground into
fine paste.
- When it boils, remove from fire and add coconut oil and curry
leaves.
- Tastes delicious with rice or idli/dosa or even rotis. Hope you enjoy
