My name is Vaishali - lot of Indian dishes tend to have lot of fat so trick is to eat low-fat vegetarian food and I think following recipe will fit the bill.

Sprouted Mung Beans

  1. Raw Mung one small bowl (one wati)
  2. Wash Mung thoroughly,
  3. Put warm water (little on hot side but not too hot) and put Mung in this warm water, cover it and let it soak overnight
  4. Next morning drain all water out
  5. Cover Mung with paper towel-3 sheets and cover with a plate
  6. Leave like this whole day
  7. In the evening you will see Mung sprouting, if not sprouted then leave it like this overnight again
  8. Next morning ready to make and there are two choices.

Choice-1
Stir Fry "Usal"

  1. Make "Phodani" in oil (needs more little more oil than usual)
  2. Put all Sprouted Mung in it and cover it with plate
  3. Heat in low heat for about 5 minutes
  4. Stir and cover and leave on low heat fry another 5 minutes
  5. Put Salt, Pepper, Masala etc as usual, stir it thoroughly
  6. Ready to eat, Mung taste delicious even if little raw, enjoy it

Choice-2
"Usal" (mung dal)

  1. Make Phodani,
  2. Put Sprouted Mung in it,
  3. Add one cup of water, cover it under med heat
  4. Cook for 5 -7 minutes
  5. Add Salt, Pepper, Masala etc as usual, stir thoroughly ready to eat, enjoy it
