I am Bhuvana Shankar from Chennai. I had contributed a dish before and I hope the readers would have tried the same and enjoyed. Even today we have vegetarians who would not even touch eggs. Why should such people forego the pleasure of eating delicious cakes. So I would like the readers to try.

Eggless Cake

Ingredients

1. Plain flour 1 3/4 cup (one and three fourth cup)
2.Sugar 1 cup
3.Coco powder 1/2 cup (half cup)
4.Sodium bicarbonate 1 teaspoon (cooking soda)
5.Salt half teaspoon
6.Cooking oil half cup
7.Thick butter milk or beaten curd one and half cup -sour (1 1/2 )
8.Vanilla essence one teaspoon
9.Cashew nuts few pieces

Method:

  1. Powder the sugar in a mixie
  2. Mix maida, powdered sugar, coco powder, baking powder, sodium bicarbonate and salt. Mix very well and sieve these in a siever.
  3. To this dry ingredients, add cooking oil and mix. Pour the buttermilk and mix very well removing all the lumps. You may use hand for the best results. The The batter should be of thick pouring consistency. Adjust the buttermilk accordingly.
  4. Grease and powder a baking tin. Pour the batter, decorate with cashew nut pieces.
  5. Bake in a hot oven for 20-30 minutes.
  6. When cool, cut into pieces
